Banana Cocoa Quinoa Flake Bake

So I saw this post when I was looking up ideas for the quinoa flakes I bought for another recipe and I thought I might as well try it too.

I was feeling a little chilly and decided now was the perfect time!

Using my that recipe as inspiration I came up with a version that has no added egg or sugary stuff.

Banana Cocoa Quinoa Flake Bake

1 small banana, mashed
1/2 tsp cocoa powder
1 Tbsp ground flax mixed with 2 Tbsp water
1/2 cup quinoa flakes

I mixed everything together and put it into two little ramekins. I microwaved them for 3.5 mins because I didn’t want to bake them in the over for 20 mins…no time!!

I’m munching on them now and they’re pretty good. Kind of like a banana bread/brownie fix with no guilt. I flipped them out of the ramekins and let them sit a bit to “dry up” and they’re good.

I think it would be worth making a larger batch and baking it in the over though. It might be more muffin like and have less moisture but over all it’s pretty good.

I probably would still prefer a smoothie for breakfast because I can cram more goodness into one smoothie than I can with these but for something different I’ll keep these gems in mind.

Have you ever tried anything like this? I guess this would be the equivalent to those muffins in a mug scenarios but since there’s no baking powder I wouldn’t attempt to make these in a mug!

  1. If you bake the Banana Cocoa Quinoa Flake Bake, what temperature do you set the oven? Also, what type of cocoa do you use? I’m so new to this….it’s confusing. On another recipe of Dr. Fuhrman’s you said to use fruit based vinegar, I’ve never heard of this, where do I buy it?

    • Hi Jamie…I used the microwave for this recipe on high. I buy fig or berry flavoured vinegars at the grocery store. It’s usually balsamic based. Try health food stores near you.
