A Beautiful Healthy Diet

I love cooking and my weekends usually involve some sort of culinary adventure.  When starting out with a healthy diet I recommend you try a few recipes per week so that after a while you’ve got a great repository of recipes to draw from.  This can make the new changes exciting and sustainable.  You don’t want to get bored of eating the same things over and over again.  There’s no enjoyment in a healthy diet if there is no variety!

I also love taking pictures and sharing what I’m cooking or preparing on my Facebook page.  I am a visual person and I love seeing pictures of food.  We usually say that you eat with your eyes first in our family and if it doesn’t look good, it may be a bit harder to convince someone to try it.

Here is the recipe for the quick black bean and corn salad I whipped together for my dinner this week:

Black Bean, Corn & Tomato Salad

I threw this together as a tasty topping for my green salad
Ingredients
  • 1 can black beans, rinsed and drained
  • 1 can corn, rinsed and drained
  • 1 can hearts of palm, rinsed and chopped
  • ½ cup chopped red onion
  • 1 chopped red pepper
  • 5 plum tomatoes, chopped
  • garlic, cumin, lime juice and chili powder to taste

Instructions
  1. Toss everything into a bowl and enjoy!
  2. If you have some salsa feel free to add that as part of your salad too!

 

I will be posting more of these recipes soon however what I really wanted to point is how beautiful and simple eating a healthy diet can be.  My meals are so colourful and full of life.  I love it!
