I can’t take credit for creating the original concept because I saw it in the video below:
BUT…I didn’t have mint at home so I improvised. Here is my version…
- 2 frozen bananas - frozen before they are too ripe
- 1 cup almond milk
- 3-4 drops peppermint extract
- 3 handfuls baby spinach
- 6-8 ice cubes
- 1 Tbsp cacao nibs
- Blend everything together except the cacao nibs. If it's smooth and frosty enough for you don't add more ice. If you want it more slushy then add more ice and blend again.
- Once it is smooth and icy to your liking add the cacao nibs and blend quickly so you still have some chunks left in it.
I love how refreshing and tasty this smoothie is and I’ve made it twice already in one week. I’m thinking it’s going to be my go to recipe for hot summer days when I want an alternative to a cafe iced drink.
Honestly I feel like I’ve discovered gold. That’s how much I love this. I tried a spoonful of mint chocolate chip ice cream a few days later and it didn’t taste this good. All I could taste was the fat and cream coating my tongue and I didn’t like the sensation.
