Yep…another recipe inspired by my desire to keep the Mr. eating like me for 6 weeks as part of his weight loss challenge. Funny enough I probably only eat oatmeal a few times a year however I know he’s going to complain about feeling too cold to drink a smoothie every morning so I’m making steel cut oats that he can simply reheat in the morning if he wants to eat something different.
I might actually get the pickiest eater to eat them too…he just walked by and seemed interested in having some for his breakfast tomorrow too! This six week adventure might rub off on him too…lol. But I’m not going to get too excited…been there, done that!
Ok…now on to the recipe!
Apple Cinnamon Steel Cut Oatmeal
(about 4 servings)
3 cups water
1 cup almond milk (or other non-dairy milk)
1 cup uncooked steel-cut oats
2 apples, peeled and grated
2 Tbsp chia seeds (or ground flax or hemp seeds)
2 tsp ground cinnamon
2-3 tsp vanilla extract
Combine the water and milk in a pot and bring to a boil. Add the oats, chia seeds and grated apple and stir very well. Reduce heat and simmer for about 20 mins until oats are to your liking.
Stir in cinnamon and vanilla at the end….stir well.
Serve immediately or let cool and store in the fridge. When you’re ready to eat it you can scoop some up and stir in some milk or water and reheat it on the stove or microwave.
