I often proclaim I’m the queen of fast and easy recipes. Honestly if something has too many ingredients or steps then I’m usually turned off unless it sounds really, really good!
Here are some recent adventures in the kitchen that are really fast and easy.
- 3 carrots, thickly grated
- 2 red peppers, sliced
- ¼ red onion, sliced thin
- 1 cup sliced or chopped purple cabbage
- 3 sticks celery, sliced
- 2 cups edamame
- Fresh garlic, 1-2 cloves
- Juice of 1 lemon or more
- Italian herbs
- After prepping all the veggies toss with enough lemon juice, garlic and herbs to suit your taste. Refrigerate for a few hours to allow the veggies to marinate.
- Try other veggies that you like such as broccoli slaw or more or less of any of the above.
A fast and easy dressing for grilled veggies – Take your favourite italian dressing, add some balsamic, a squirt or two of mustard and a squirt or two of agave or honey. So tasty! If you have leftovers then toss in some chick peas and enjoy for lunch the next day.
A green smoothie goes down well any time but summer is when most people like a tasty fruity drink. My recent delight was what I called a peachy green smoothie. Here are the videos before and after…
And if you have time and you want to delight in a raw, vegan taco salad then you have to try this one. It took a little more time because I made everything from scratch but it was sooooo worth it!
If you want to make it vegan and save some time, try it with veggie chili and guacamole. The guac is creamy enough that you won’t miss the sour cream substitute but if you have some on hand then go for it!
