Black Bean and Corn Salad

I love the combination of black beans and corn.  A few days ago I made a salad however I wanted to maximize the veggies and nutrients in the salad so I threw in a bunch of them in too!

This is very easy going and you can add whatever you like to the salad.

Here’s what it ended up looking like…

This particular combination contains the following ingredients:

2 cans black beans, rinsed and drained

1 can corn

1 whole english cucumber

1 red pepper

1 yellow pepper

5 plum tomatoes

4 roasted red peppers

red onion, to taste

1 can hearts of palm

2 carrots

Chop all the veggies and combine with the beans and corn.

Add your favourite salad dressing.  In this case I used fat-free italian dressing and some chili powder to give it a twist along with extra chopped garlic.  Taste it and adjust it to suit your taste.

This made enough for 4 lunches and it tastes great.

Give it a whirl!

Try to zip it up with salsa added to the mix instead of your favourite salad dressing.
