Do not fear the invasion of the ripe bananas!

I had way too many ripe bananas and I didn’t want to freeze even more so I took 8 of them and made two loaves of chocolate mocha banana bread with pecans.  It smells great here right now!  I love this recipe because it always turns out great no matter what I add to it and I make it with the help of my Vitamix.

Today I doubled the recipe, added 1/2 a cup of cocoa powder, 2 Teaspoons of instant coffee powder and 1 cup of chopped pecans.

 

It’s fast and easy to make and it’s low fat.  If your family is going to eat cake at least you can make one that doesn’t include a whole bunch of oil right?
