Falafel Burgers & Baba Ganoush


Babaganoush – 2 eggplants cut in half and roasted till soft and mushy, 2 tbsp tahini, juice of 1 big lemon, 3 garlic cloves, a little hot sauce….purée in blender

Falafel burgers – 3 cups cooked chickpeas, 1 cup sunflower seeds soaked for 8 hrs, 2 tbsp dry parsley, juice of 1 lemon, 3 cloves garlic, 1 tsp cumin…process in food processor until well combined but still a bit chunky. Add water if necessary (2-4 tbsp). Shape into small patties and bake at 350 until dry outside but still a bit moist inside
