Nutritarian Gigantic Beans

The key to this recipe is simmering so the flavours meld. Simple goodness without the need for too much work.

We love this…since making this recipe it has become a popular and quick meal.

1 onion, chopped
2 cloves of garlic, chopped
1 non-sodium, veggie bouillon cube
2 cups diced tomatoes plus liquid
2 Tbsp dried parsley
1/2 tsp dried oregano
a few cranks of fresh ground black pepper
2 cans butter beans or large lima beans
1.5 cups water

Saute the onion until brown and soft. Add the garlic, bouillon and tomatoes and cook down until tomatoes start to break up. Add the rest of the ingredients and simmer on low heat up to one hour to let flavour meld and beans soften.
