Nutritarian Recipe – Mexican Micro Salad

This nutritarian recipe packs a great health punch because it features cabbage as the main ingredient.  You know how good cabbage and other cruciferous veggies are right?  This has those benefits and it’s oh so tasty!

It evolved from a cabbage mexican “rice” dish to a much bigger salad adventure.

Here’s the recipe:

Serves: 6-8
  • Salad:
  • 1/2 a cabbage, grated or finely chopped
  • 1 c frozen peas
  • 2 green onions chopped
  • 1 zucchini chopped
  • 1 red pepper chopped
  • 6 mushrooms chopped
  • Dressing:
  • 3 roasted red peppers
  • 1T sundried tomato
  • 3 T water
  • 2t chili powder
  • 1/2 t cumin
  • 4t onion powder
  • 2t garlic powder
  • 3T nutritional yeast
  1. Combine all the salad ingredients together.
  2. Whiz all the dressing ingredients in the blender and pour over salad.
  3. Let sit for a while to blend the flavours and enjoy!
