Roasted Red Pepper Hummus

Yesterday I was craving something spicy and zippy.  I wanted hummus!  I whipped this recipe together in my Vitamix rather quickly and had to control myself from eating the whole thing by myself!

You can eat food that tastes good and enjoy weight loss and optimum health.  I’m not sure why a plant-based, whole food diet seems so restrictive to some.  The key is to focus on ALL the foods you CAN eat.  My culinary tastes actually expanded and I discovered lots of new and tasty recipes after changing my eating.  I was literally stuck in a rut before.

Roasted Red Pepper Hummus

A tasty twist on your regular hummus. No added fat or salt. Perfect for nutritarians, vegans or vegetarians
Ingredients
  • 1 can chick peas, rinsed well
  • 2 tsp garlic paste
  • 2 roasted red peppers
  • 1/2 tsp cumin
  • 1 tsp chili powder
  • 1 tsp shriracha (vietnamese hot sauce)
  • a little bit of water to get it going in the blender
Instructions
  1. Dump everything into the Vitamix and blend until smooth.

This is awesome with raw veggies or as a spread for veggie wraps.  In a pinch this would even be great as a salad dressing if you add a bit more water!
