Nutritarian Moroccan Carrot Salad


Fifteen minutes ago I wasn’t sure what I was going to make as a dressing for my salad and now the salad is ready and waiting to be eaten. Scroll down for a photo.

I mixed together the following ingredients for a dressing:

1 whole orange (peeled, of course)
2 tsp chopped garlic
1/2 tsp cumin
1/8 tsp cinnamon
2 tsp mustard
a glug or two of balsamic vinegar
1/4 water
1/2 tbsp cashew butter

Whizzed it all together and mixed it with 4 whole grated carrots, 1/4 c sunflower seeds and a tbsp golden raisins…sprinkled a little parsley for colour.

That’s it!
