I modified these from a cookbook I got for Christmas called “Quinoa Revolution” by Patricia Green. It’s actually featured in a photo on the cover but it has eggs and cheese in the original and that does work for my nutritarian ways.
Here’s what I did…
1 cup water
1/2 cup red quinoa
1 large onion chopped
2 cups mushrooms finely chopped
1 tsp chopped garlic (more or less)
2 tbsp ground flax
4 tbsp water
1 tsp chili powder
1 tsp hot sauce
1/2 cup pecans, chopped finely
1/3 cup oatmeal flakes
Combine the quinoa with the 1 cup water and bring to a boil. Simmer for 10 mins until quinoa is cooked and water is absorbed.
Sautée the onion in water in a nonstick pan until the onion is soft. Add the mushrooms and garlic. Cook until the mushrooms are soft and the mixture is relatively dry.
Combine the ground flax seed with the four tablespoons of water and set aside.
When the quinoa and veggie mix are cooled down a bit combine them with the rest of the ingredients.
Spray a cookie sheet with no stick cooking spray. Take the quinoa mixture and measure out half cup at a time and shape into one inch thick patties.
Bake at 350 degrees for half an hour.
