In my recent kitchen adventures I decided I was going to make raw sushi…no, not raw fish but sushi with no rice suitable for a raw food diet. I like trying a variety of recipes and that includes raw food recipes too.
I’ve read about making rice substitutes with parsnips and cauliflower but I wanted a pate that would be flavourful enough so the sushi wouldn’t need a dipping sauce.
I’m pleased with the result of this pate…
Zesty Sunflower Seed Pate
1.5 cups raw sunflower seeds (soak and rinse twice for 24 hrs)
2T dried parsley
1 green onion chopped
2T raw tahini
1/4 fresh lemon juice
3 cloves of garlic, minced
pinch of black pepper
pinch of paprika
2t onion powder
1T nutritional yeast
1/3 of a red pepper, chopped
hot sauce to taste (optional)
Run this all through the food processor until it is mostly smooth but still a bit chunky.
This is perfect as is but I used it as my base for my raw sushi…that post coming soon!
