Zucchini Pasta & Fresh veggies

This was just something I threw together one evening when I didn’t feel like making a side dish for the guys that was different than what I was eating for dinner.

I spiral sliced 4 zucchinis and set them aside.  This is better if they aren’t too cold.

In a non-stick pan I sauteed two onions, some peppers and garlic.  I added italian herbs to suit my taste and finished it off with some chopped tomatoes and a splash of red wine vinegar.  I let it sit to cool down so it wouldn’t wilt my zucchini too much.

Just before serving I tossed it all together and it was like a pasta salad side dish…everyone ate it…even my picky eater!527796_418951511460100_1654200110_n
